A popular delicacy available at the Ikufudo Seinikuten (butcher) in the town of Minakami, this local version of “Serrano” ham uses local pork and natural sea salt, with no additives. The ham is dry-cured in the cold dry air flowing down from nearby Mt. Tanigawa. A great snack with beer or wine.
