With imo-shochu (made from sweet potato), mugi-shochu (made from wheat), and many others—Japan’s original distilled beverage can be produced from many different grains, with different bases and different production methods delivering a wide variety of distinctive flavors. Like sake, shochu goes great with Japanese food, and can be enjoyed at most restaurants. Mihoh Shurui Co. is an important shochu producer based in Takasaki, close to local wheat production.
