The Yuzawa–Niigata–Sado area has become famous for its sushi, featuring great rice from local fields and fresh fish from the Sea of Japan. The area receives some of the largest snowfalls in the country, and the fish here thrive on the nutrients picked up as the meltwater passes over the plain and into the sea. Warm and cold currents come together here as well, supporting a wide variety of sea life.
“Kiwami” Sushi Set
This special 10-piece sushi set offers a great seasonal selection of fish from the Japan Sea. The set can be enjoyed at numerous participating sushi restaurants, but only within Niigata Prefecture. Delicacies such as deepwater prawn (nanban ebi) and willowy flounder (yanagi garei) are taken directly from the waters around Niigata. Other delicacies include sea urchin (uni), fatty tuna (toro), and salted salmon roe (ikura).
